Flank Steak with Zucchini Gratin

Flank Steak w/Zucchini Gratin (Great for all phases)


1 lb. Flank Steak

1 lb. Zucchini, thick sliced

2 oz. Parmesan cheese, grated (phase 4 only) PHASE 1 SEASON WITH SALT, PEPPER AND GARLIC POWDER

1 tsp. black Pepper

1 tbsp. cayenne pepper

2 tbsp. Rosemary, chopped

1 tsp. olive oil

cooking spray



Heat broiler on high. Rub steak with olive oil, black & cayenne peppers and rosemary on both sides. Broil about 5 minutes on each side or until it reaches desired doneness. Boil zucchini for 2 minutes, then drain. Meanwhile grease pie plate and arrange zucchini in a circle, slightly overlapping them. Season with salt, pepper, garlic powder and Parmesan cheese (phase 4 only) Bake at 400 for 30 minutes, then at 475 for 10 additional minutes
