One Pot Kale and Turkey Soup

One Pot Kale and Turkey Soup (great for all phases)

Ingredients:

  • low sodium chicken Broth – 1 cup
  • Lean Ground Turkey, 16 oz
  • Crimini Mushrooms – about 2 cups
  • Garlic, minced 1.5 tsp
  • Kale, 145 grams
  • Salt, 1 dash
  • Pepper, black, 1 dash
  • red onion, chopped 45 grams (phase 4 only)
  • Kidney beans, dark red, low sodium, 2.5 cup (phase 4 only)

Directions:

1. brown ground turkey with onions (phase 4 only), garlic and salt and pepper to taste

2. put ground turkey, kale (chopped into bite-sized pieces), beans ( phase 4 only), mushrooms and broth into crockpot.

3. cook until tender (about 1 hour)
