Oven Roasted Escarole

Oven Roasted Escarole (great for all phases)


Ingredients:

  • 1 large head of escarole, cut into quarters (or 3 heads of radicchio, cut in half lengthwise)
  • cooking spray
  • garlic powder to taste,
  • Kosher salt
  • Freshly ground pepper
  • Walden Farms Balsamic Vinaigrette

Directions:
Preheat oven to 4oo degrees, and spray a large glass baking dish with cooking spray.

Mist the escarole with cooking spray and season.

Spread the escarole in a thin layer and bake for 15 minutes then flip the escarole and continue cooking (8- 10 ) until tender.

Serve with a drizzle of Walden Farms balsamic dressing.
