Cauliflower Soup (great for all phases)
- 1 large head cauliflower – chopped
- 1/2 cup chopped onions (phase 4 only) (phase 1-3 may substitute 1/2 cup scallions or 1/8 cup of dried minced onion OR 1/8 cup onion powder )
- 4-6 cups water
- 2 chicken bouillon cubes
- salt and pepper to taste
In a 5 quart saucepan, add all ingredients.
Cover and simmer until vegetables are tender (about 20 minutes.)
Puree with an immersion blender until smooth.
