Thai Steamed Mussels (great for all phases)
2 teaspoons olive oil
1 cup low sodium chicken broth
1/4 cup minced shallots
4 medium garlic cloves, minced
1 small bay leaf
1/2 teaspoon curry powder
2 pounds mussels, cleaned & debearded
1 tablespoon of chopped fresh cilantro
1 tablespoon of chopped fresh mint
1 tablespoon of chopped fresh basil
Clean mussels and set a side.
In a deep pot heat olive oil and then add shallots, garlic, bay leaf, chicken broth, and curry powder. Cook for about 3 minutes then add mussels.
Put a lid on the pot and let the mussels steam for about 2 minutes.
Stir and then cook for another 3 minutes or so.
Remove mussels from pot, place in a large bowl and cover with foil.
Add fresh herbs to the liquid in the pot and let them simmer for 1 minute. Then pour over mussels.
