Slow cooker Chicken Vegetable Soup (Great for all phases)
- 1 lb. Chicken – Cubed
- 8 Cups Low sodium Chicken Stock
- 1 Cup Carrots – Chopped (Phase 4 only)
- ¾ Cup Sweet Onion – Chopped (Phase 4 only)
- 2 Ribs Celery – Chopped
- 1 Medium Zucchini – Halved Lengthwise and Sliced
- 2 Tbs. Minced Garlic
- 2 tsp. Sea Salt
- ½ tsp. Dried Oregano
- ½ tsp. Italian Seasoning
- ½ tsp. Dried Thyme
- ¼ tsp. Black Pepper
Heat slow cooker on low setting.
In a large skillet, over medium-high heat, pan-sear cubed chicken. About 5 minutes. This step is optional. You can simply put all the ingredients in the slow cooker and let it get to work, but pan-searing the chicken in salted butter first will add a lot of flavor to the soup.
Add all ingredients to slow cooker and allow to cook on low for 6-8 hours.
