Slow cooker Chicken Vegetable Soup

Slow cooker Chicken Vegetable Soup (Great for all phases)

INGREDIENTS:

  • 1 lb. Chicken – Cubed
  • 8 Cups Low sodium Chicken Stock
  • 1 Cup Carrots – Chopped (Phase 4 only)
  • ¾ Cup Sweet Onion – Chopped (Phase 4 only)
  • 2 Ribs Celery – Chopped
  • 1 Medium Zucchini – Halved Lengthwise and Sliced
  • 2 Tbs. Minced Garlic
  • 2 tsp. Sea Salt
  • ½ tsp. Dried Oregano
  • ½ tsp. Italian Seasoning
  • ½ tsp. Dried Thyme
  • ¼ tsp. Black Pepper

 

DIRECTIONS:

Heat slow cooker on low setting.

In a large skillet, over medium-high heat, pan-sear cubed chicken.  About 5 minutes.  This step is optional.  You can simply put all the ingredients in the slow cooker and let it get to work, but pan-searing the chicken in salted butter first will add a lot of flavor to the soup.

Add all ingredients to slow cooker and allow to cook on low for 6-8 hours.
