Turkey Meatballs and Vegetables

Turkey Meatballs and Vegetables (Great for all Phases)

  • 1 lb ground turkey
  • 2 Egg Whites
  • 1/4 cup parsley
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1 tsp onion powder
  • 1 1/2 tsp minced garlic
  • 3/4 c grated zucchini
  • 3/4 c shredded cauliflower
  • 1/2 c chopped mushrooms or spinach

 

Mix evenly and create balls. Bake for 18-20 minutes at 425 on a non-stick cookie sheet.
